Yield: 3 - 4 servings
Prep Time: 15 mins
Total Time: 60 mins
Ingredients
Hummus
250 g dried chickpeas (soaked overnight) / canned
200 ml olive oil
150 ml chickpea water
4 garlic cloves
1tbsp paprika
1 tsp salt
Tahini *optional
Pork
1 tsp garlic powder
1 tsp onion powder
1/2 tsp ginger powder
1 tsp paprika
1/2 salt
1 tsp cayenne pepper
600 g Pork (diced)
Sprinkle of olive oil
Directions
Preheat oven at 220°C. Put chickpeas in a pan, add water so they are fully covered. Bring to boil and cook for 25 - 35 mins
Mix spices together. Drizzle some oil on diced pork and rub spices on it. Put in oven for 20 - 25 mins.
Drain the chickpeas but keep the water in a bowl. Put chickpeas in a blender, add garlic, paprika, cayenne pepper, tahini *optional (I like to add tahini, but didn't have any at hand, it's a sesame paste and gives a nutty aroma) salt, oil and water. Blend.
Add more water or oil to get the consistency you like. Serve with Pita Bread and Salad. I also like to serve with Antipasti. Dig in!
